Sugared Sweet Potatoes
Prep: 10 min, Cook: 15 min.
  • 1 lb. cooked sweet potatoes, peeled and cut into 1/2 inch thick slices
  • 1 Tbs. plus 1 tsp. unsalted butter
  • 1 Tbs. plus 1 tsp. brown sugar, firmly packed
  • 1/4 tsp. ground cinnamon
  • 1/8 tsp. salt

Place sweet potatoes in a steamer basket over boiling water. Cover saucepan and steam 12-15 minutes. or until potatoes are tender. Remove steamer basket from saucepan. Meanwhile, melt butter in a heavy nonstick skillet over low heat. Stir in brown sugar, cinnamon and salt. Add cooked sweet potatoes to skillet and toss to coat. Serve hot.
