Spinach Salad with Sun Dried Tomatoes

- 1 lb. spinach leaves, washed and torn into pieces, tough stems discarded
- 2 cups mushrooms, sliced
- 1/4 cup sun dried tomatoes, drained and chopped
- 2-1/2 Tbs. olive oil
- 1-1/2 Tbs. red wine vinegar
- 1-1/2 tsp. mustard
- 1 clove garlic, crushed
- 1/4 tsp. salt (optional), or to taste
- 1/4 cup croutons
Combine spinach, mushrooms and tomatoes in a salad bowl. Combine remaining ingredients except croutons in a jar with a tight-fitting lid. Season with pepper to taste and shake vigorously. Pour dressing over spinach and toss. Serve with croutons
