Berry Good Tapioca Pudding
Prep: 10 min, Cook: 10 min, plus chilling time.
- 1/4 cup sugar
- 2 Tbs. quick tapioca
- 1/2 cup orange juice
- 10 ounces fresh raspberries
- 2 cups strawberries, hulled and sliced
- 1 banana, halved lengthwise and sliced
- 1/2 cup vanilla yogurt
Combine first 3 ingredients in a heavy saucepan. Set aside 5 minutes before bringing to a boil over medium heat, stirring constantly. Immediately pour mixture into a mixing bowl. Set aside 15 minutes, stirring occasionally, to allow pudding to cool. Stir in berries and banana. Divide into individual serving dishes. Cover and chill. Serve with a dollop of yogurt.
