Greek-Style Fava Beans

- 2 Tbs. oil
- 1 clove garlic, thinly sliced
- 1 onion, finely chopped
- 1 lb. canned fava beans, drained
- 8 tomatoes, skinned, seeded and chopped
- 2 Tbs. dry white wine
- 1 Tbs. fresh parsley, chopped
- 1 bay leaf
- salt and pepper
Heat the oil in a pan, add the garlic and onion and fry for 4-5 minutes, without browning. Stir in the fava beans and toss well to coat in the oil. Add the remaining ingredients, with salt and pepper to taste. Cook on low heat for 5 minutes. Remove the bay leaf and let cool before serving.
