Breakfast Turkey Tortillas

- 6 large eggs
- 1/2 cup milk
- 1/2 lb. ground turkey
- 8 flour tortillas
- 1/2 cup salsa
- 1/4 cup Monterey Jack cheese, Asiego cheese, or other cheese, grated
In a mixing bowl, blend eggs and milk with whisk. If desired, add salt and pepper to taste. Set aside. In a large skillet over medium heat, cook ground turkey until fully cooked. Remove and set aside. Drain most but not all the grease. Add egg mixture to the skillet. Cook on low to medium heat until fully cooked.
Wrap tortillas in aluminum foil and warm in the oven at 450°F for 3-5 minutes. Remove and spoon eggs and meat into each tortilla. Top each tortilla with salsa and grated cheese.
